Quinoa salad

This salad is amazing! I have been thinking about a quinoa salad with hazelnuts and pomegranate for ages! The combination of those ingredients seemed delicious to me. And here it is: a delicious, healthy lunch.

Since my sister and I both want to bring our lunch with us when we’re going to college – but we love to have something really really delicious and we don’t want to stick to our sandwiches (although they are delicious as well) – a salad like this is such a good alternative. It’s fresh, filling and so tasteful We were both on different locations, but couldn’t resist to text each other about this first time ever quinoa lunch box. Both enjoying this delicious meal during the work that needed to be done.

The combination hazelnut and pomegranate is always good. Adding them to a quinoa salad is very very good. The crunchiness of the nuts, the exploding and freshness of the pomegranate seeds and the fantastic quinoa. For some vegetables I wanted to add one without a very strong flavour but with some texture as well, so celery it was. And these ingredients all together, with a fresh and sweet dressing, make a lunch box very delicious!

Quinoa salad with pomegranate, hazelnuts and celery
yield: 2 lunch servings

Ingredients:
1 cup uncooked quinoa
seeds of 1/2 a pomegranate
60 gr hazelnuts, toasted
2 sticks of celery
1 tbs honey
1 tbs white wine vinegar
1 tbs balsamic vinegar
juice of 1/2 a lemon
freshly ground pepper
pinch of salt
chili flakes

Directions:
Take your quinoa and rinse it well. Put this, together with 2 cups of water, in a pan and let it come to a boil. Cook it further for another 15 minutes. Drain your quinoa and let it sit in a sieve for a few moments so that there’s no water left.
In a big bowl, make your dressing. Combine vinegar, pepper, salt, lemon juice and honey. Add your quinoa, celery and pomegranate seeds and gently mix everything.
You can store this in the fridge up to 3 days if you like.
Before serving/eating/taking it away, add the toasted hazelnuts and mix everything. You can keep this fresh, with crunchy hazelnuts, up to 1 day.
