Rocket and walnut pesto


There is nothing better than making your own food. Homemade instead of store bought. The difference is so clearly when making a pesto like this. That new, just created flavour: it’s amazing. This time we have something else than a regular basil-pine nut pesto: rocket and walnuts! Together with quite a lot of garlic, some good olive oil, salt and pepper and lemon juice, this pesto is fresh and extremely tasteful.

What ever pasta you’re making, this pesto will be delicious with it. We had a combination with wild mushrooms and ricotta ravioli, but something with cherry tomatoes, mozzarella and zucchini can be a possibility too (not even mentioning everything a pasta pesto can go with..)

Rocket and walnut pesto
yield: 4 servings

60 gr walnuts
1 clove garlic
60 gr rocket salad
1/2 lemon
60 ml good quality olive oil
(some extra walnuts, rocket and lemon to serve)

This is absolutely too simple to describe it as directions, but here we go:
Put all of the ingredients in your kitchen machine, pulse until ‘crumbly’.
Transfer it to a bowl, decorate it with the remaining walnuts, rocket and pieces of lemon (if you wish to serve it on the side).
