Goat cheese and cherry tomato tartlets
I think most people like the combination of goat cheese and thyme. This tartlet with goat cheese, thyme and cherry tomatoes is than a great example. The cherry tomatoes make it warm, moist and colourful. The dough is flaky and crunchy. The goat cheese warm, soft and melting. Mm.
Goat cheese and cherry tomato tartlets with thyme.
Yield: 4 tartlets
4 pieces of pastry dough
12 cherry tomatoes, sliced
2 tbs tomato paste
4 pieces of goat cheese
a few sprigs of thyme.
salt and pepper
Preheat your oven to 180C.
Roll out your pastry dough so you’ll have 4 equal rounds.
Spread 1/2 a tbs of tomato paste on each, layer the cherry tomato slices on top of it.
Season this with salt and pepper, lay your piece of goat cheese on top and sprinkle some thyme leaves over.
Bake the tartlets for 15 minutes or until crispy and golden.
